Mango Black Bean Salsa


(Can be made ahead of time and kept refrigerated for several days.)


Ingredients

2 fresh ripe mangos, diced
1 firm, ripe avocado, diced, not mashed
1 16 oz can black beans
1 Tbsp honey
1 Tbsp olive oil
1/4 cup diced red onion
1/2 to 1 whole seeded and diced jalapeño pepper, depending on taste
Fresh cilantro or mint, chopped fine
1 lime
Kosher salt and pepper to taste

Directions

Combine all ingredients. Zest the lime and squeeze the juice into the mix.
